1906, from French bistro (1884), originally Parisian slang for "little wineshop or restaurant," that will be of unknown beginning. Commonly considered from Russian bee-stra "quickly," picked up throughout the Allied career of Paris in 1815 following the beat of Napoleon; but this, but quaint, is unlikely. Another-guess is the fact that it's from bistraud "just a little shepherd," a word associated with Poitou dialect, from biste "goat."
